Bill Romanos was eight years old when he started work sweeping the floors at a local picture framing business. By the time he was 12 he had a regular part time job cleaning up at a local butchers shop. A few years after this he had an opportunity to obtain 47 very run down sheep from a farmer at Murchison who had been too lazy to feed them properly and just wanted to get rid of them. Bill decided to make sausages from the two tonnes of meat using an orange and oregano recipe that had been in his family for more than 70 years. Well, everyone loved them and Bill realised that being a butcher was his destiny!
When Bill met his wife Elizabeth Totino the two of them decided to start a family business called Romatino Quality Meats. They started their business in Lalor and after 15 years moved to their current location at the Northcote Central Plaza Shopping Centre next door to Aldi. That was eight years ago and now they have a team of eight staff and turn over $60,000 a week from their continental style butcher shop.
Apart from their flagship orange and oregano sausages they have become famous with their clientele for their mouthwatering Gyros seasoned with special herbs and spices and put on the bar ready to go for no extra charge. They are also well known for the exceptional quality of their beef from Cape Grim in Tasmania. The beef is completely chemical and GMO free and has a unique salty flavor from the sea salt on the grass close to the ocean where the cattle feed.
Apart from their strong retail customer base Bill has established a strong presence in the wholesale market supplying many of Melbourne’s leading restaurants. Bill and Elizabeth are currently looking at taking over a refrigerated warehouse facility to expand this new market sector.
When Bill’s not making sausages and running the shop he enjoys fishing in the bay and game shooting near Rochester, both of which are often on sale the following day!
